Tarte Tatin was accidentally made in the 1880s at the Hôtel Tatin in Lamotte-Beuvron in Loir-et-Cher, south of Paris. One day Stephanie started making traditional apple pie, but she was so overworked that she boiled the apples in the butter and sugar for too long. Smelling burnt, she tried to salvage the dish, placing the pastry base on the apple pan and popping the entire pan into the oven to quickly finish cooking. After flipping out the upside-down egg tart, she was surprised by how much hotel guests appreciate the dessert. Originally, tarte Tatin was made with two local apple varieties: Reine des Reinettes and Calville. Later Tarte Tatin can also be made with pears, bananas, papayas, peaches, pineapples, tomatoes or other fruits and vegetables.
