Tiramisu Basque Cake

Coffee Basque Cheesecake:
Cream cheese 130g
40 grams of sugar
1 large egg (50 grams shelled)
1 teaspoon of corn starch
Whipping cream 60g
Espresso 10g
Baileys liqueur 10g
Mascarpone cream:
Mascarpone cheese 55g
90g whipped cream
20 grams of sugar
Step
1. First make the Basque cheesecake. Add sugar to the cream cheese that has softened at room temperature, and use a whisk until smooth and no particles.
2. Add the egg mixture in two batches and stir until smooth.
3. Add corn starch and mix well. Then add whipped cream, espresso, Baileys liqueur, and stir until the liquid is smooth. (In short, all the ingredients are mixed together and blended until smooth!!)
4. Spread baking paper in a four-inch cake tin, pour the cake batter, and leave it at 220 degrees Celsius for 18-20 minutes. Take it out and let it cool for later use. The Basque cheesecake has some shaking in the middle when it is taken out, and it is normal for it to cool down.
5. Make the mascarpone cream layer, whipped mascarpone + sugar until smooth
6. Pour the whipped cream, and use a whisk until it is lifted and there will be short sharp corners (hard beating)
7. Spread the whipped mascarpone cream on the completely cooled Basque cheesecake, smooth the top, and keep it in the refrigerator for more than five hours. Sift a layer of cocoa powder on the top before serving.
