Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest layer, consists of a mixture of soft, fresh cheese (typically cottage cheese, cream cheese or ricotta), eggs, and sugar.

The earliest attested mention of a cheesecake is by the Greek physician Aegimus (5th century BCE), who wrote a book on the art of making cheesecakes. The English name cheesecake has been used only since the 15th century, but the cheesecake did not evolve into its modern form until somewhere around the 18th century. Europeans began removing yeast and adding beaten eggs to the cheesecake instead. With the overpowering yeast flavor gone, the result tasted more like a dessert treat.

Sometimes there is a bottom layer of cheesecake, it often consists of a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sometimes sponge cake. It may be baked or unbaked (usually refrigerated).

Cheesecake is usually sweetened with sugar and may be flavored in many different ways. It may be flavored by adding vanilla, spices, lemon, chocolate, pumpkin, or other flavors to the cheese layer. Additional flavors and visual appeal may be added by topping the finished pie with fruit, whipped cream, nuts, cookies, fruit sauce, chocolate syrup, or other toppings.

Ingredients

For the cheesecake mix:                                 For the sauce:

1 lemon, juice and zest                                  ½ bag frozen fruits, defrosted

2 digestive biscuits                                     icing sugar, to taste

255g/9oz mascarpone cheese

15g/½oz butter, softened

110g/4oz caster sugar

1 tbsp icing sugar

1 tsp clear honey

mint, to garnish

Method

1. Crush the biscuits into small pieces and combine with the butter and honey. Place this mixture into one small metal ring and press the mix evenly on the bottom of the mould.

2. Add the lemon juice and zest and caster sugar to the cheese, being sure not to mix it too much as this will cause the mix to split.

3. Spoon the mix into the ring and using a palette knife press the mix well into the moulds to prevent air gaps. Remove the ring with a hot cloth or blowtorch.

4. Blend most of the fruits with some icing sugar (to taste) and pass through a sieve

5. Place the cheesecake on to a plate and decorate the top with the sprigs of fresh mint and spoon the sauce around the side and decorate with the remaining berries.
