Materials: (100 pieces): 5kg of fine glutinous rice flour, 3.5kg of white sugar, 600g of walnuts, 500g of pine nuts, 250g of dried green plums, 150g of orange, 250g of rose sauce, 25g of red yeast rice noodles, 25g of soybean oil.
Production Method:
1. After selecting the kernels, put them in boiling water and soak for about 15 minutes to remove their astringency. After draining the water, cut them with dried green plums and orange (ie orange exocarp) into soy-sized cubes, and put them in a plate. Mix the pine nuts well to make the filling. Sift the red yeast rice noodles and set aside.
2. Pour fine glutinous rice noodles, red yeast rice noodles, and white sugar (2kg) into a wooden bucket together, grill the nest on both ends, scoop 350g of clean water, and mix well by hand (the trick should be light, the mixing should be even, and the number of times should be less) . Afterwards, let it stand for about 3 hours, then use a sieve to form a cake powder.
3. Take a steaming bucket, put bamboo at the bottom (wipe 15g of soybean oil), first spread a thin layer of cake flour, steam it on a boiling water pot, see the steam gradually rising from around the cake flour, then add other cake flour fractions Sprinkle it evenly and lightly on the steaming place. After sprinkling, steam on the lid for about 10 minutes. When the cake noodles are rosy and the texture is soft, pull out the outside with chopsticks. Take out the chopsticks and it will be ripe if you don’t see the batter on the outside. The flour is evenly transferred to the hot spot, and then covered, steamed for 3 to 5 minutes, until it is fully mature), and then take it off.
4. Spread the white sugar (1.5kg) on the chopping board, pour the cooked cake blanks underneath, knead the sugar into the cake with your hands, and then gradually put the fruit filling and rose jam on the surface of the cake while kneading lubricating.
5. Take a cake board (length 67cm, width 46cm), put a cake frame underneath (length and width are the same as the cake board, height 5.3cm), smear a layer of soybean oil (10g) on the inner wall of the cake frame and the cake board. Put the rubbed cake in, flatten with both hands (the thickness is the same as the cake frame), and the four corners should be flat. After drying for 4 hours, remove the cake frame and cut into pieces (100 pieces) of 8.3cm length, 4.3cm width, and 1.3cm thickness, and serve.
