Production process
- Pour ingredients other than salt, butter, and dried cranberries into a kneading bucket, mix at low speed and then high speed, beat until a coarse film is formed, add salt and butter, and continue kneading until fully expanded.
2. Round the dough and place it in a container at a temperature of 26 degrees Celsius and a humidity of 75%. Let it ferment for 50-60 minutes.
3. Take out the prepared dough.
4. Divide into 3 equal parts, roll them round, cover them, and let them relax for 15 minutes.
5. Take a dough with a smooth surface facing up and use a rolling pin to shape it into an oval shape.
6. Roll it over, cover it up, and let it relax for 15 minutes.
7. Roll the roll with the mouth facing downwards, exhaust the air by hand, and roll it into a long strip shape.
8. Flip over, press down on the bottom edge, sprinkle dried cranberries, roll up, and pinch tightly.
9. Put in a 450g toast mold, with 3 doughs per mold.
10. The secondary temperature is 36 degrees Celsius and the humidity is 75%.
11. Fermentation until 8 minutes full.
12. Place the preheated oven, lower layer, low sugar toast box, on high heat 140-150 degrees, on low heat 190 degrees, for about 28 minutes. (Please adjust the temperature and time according to your own oven mold)
