Lamington Cut – Ultrasonic Knife Cutter – Cheersonic

A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. The thin mixture is absorbed into the outside of the sponge cake and left to set, giving the cake a distinctive texture. A common variation has a layer of cream or strawberry jam between two lamington halves. Lamingtons remain a popular treat across Australia and New Zealand, and 21 July was designated as National Lamington Day in Australia. In Hungary, a similar item is known as kókuszkocka, or coconut squares.

The lamington is crumby, which places higher demands on cutting technology and equipment. The use of the ultrasonic technology is suitable to cut soft, creamy, sticky and multi-layer products as well as fresh and frozen products. Using the high frequency vibrations of the blade, we can drastically reduce the friction between the product and the blade, allowing for superior quality cuts, even when processing delicate, soft or crumbly products. The ultrasonic vibrations prevent food from crumbling, shattering or from sticking to the blade. Foods containing items such as nuts, berries and fruits can be cut without deformation or displacement of the internal product. The low-friction condition also reduces product sticking to the cutting tools, resulting in more consistent cuts and less down time for cleaning. And because of the advanced process control that is available in ultrasonic generators, cutting performance can be manipulated by adjusting the equipment parameters.
