Quetschentaart is a popular Luxembourg dessert which is much simple to make. It is actually an open fruit tart with zwetschgen.
The zwetschge is a fruit-bearing tree, or its fruit. It is a subspecies of the plum. The freestone fruit is similar to, but distinct from, the clingstone damson. But the zwetschge could be replaced by plum or damson when making a quetschentaart.
Traditionally, it is a seasonal dish served in the autumn when the zwetschgen are ripe. And it is often served with whipped cream at afternoon coffee.
In the Ketty Thull recipe, the dough for the shortcrust base consists of flour, butter and sugar (unusual for French-style shortcrust, but to balance the sourness, which is key) only. The base is placed in a tart baking dish, and covered with halved plums (no stones) arranged in overlapping circles. It is baked at 180 °C (356 °F)-200 °C (392 °F) for 45-40 minutes or until ready.
In other recipes, the base is made with a yeast dough.
For homemade quetschentaart, ingredients and making steps are as following:
Ingredients:
125g butter softened
50g sugar
1 egg
250g flour
1 pinch of salt
500g plums
Making Steps:
- Prepare the dough: Beat the butter with the sugar, then add the egg and beat until fluffy.
- Sift in the flour and salt and quickly knead into a firm dough. Wrap in cling film and put into the fridge for 30 minutes.
- Preheat the fan oven to 200° Celsius. Roll out the dough and put into a buttered tart tin.
- Wash the plums, halve, remove the stone and cut into six wedges.
- Arrange the plum slices in circles on the tart base. Bake for 40 minutes or until the base seems not too soggy anymore (it will always remain slightly soggy because of the plum juice that oozes from the fruit).
Usually, quetschentaart is baked in round mould. And after baking, it is served as a small sectors. But with a whole layer of plums orderly arranged at top, it is not easy to cut by normal knife. When it is cutting, the pressure and friction would be caused, making the plums fallen and messy.
