Banana loaf is a bread with bananas as the main ingredient. It is a typical sweet, moist quick bread. It can be made with heavy flours such as wholemeal flour and all-purpose flour. However, the main ingredient in this recipe is ripe bananas. It is time to bake banana bread when the skin of the bananas freckles and starts to darken. Ripe bananas (ripe to the point of complete black mush) will give the bread a richer flavour. At this stage, they are soft.
