Ultrasonic cheese bar cutting technology is an advanced precision cutting method that is particularly suitable for cheese and other soft or semi-soft materials. This technology creates a nearly frictionless cutting surface by using a blade that vibrates at a high frequency, significantly reducing the risk of cheese deforming or sticking to the blade during cutting.

This enables the machine to automatically adjust the cutting knife’s index stroke when a new cheese stick arrives, ensuring that the initial cut is very short (3/16″ to 1/4″) and automatically rejects this small piece using a downstream reject device.
